Yes, you can do this. Be prepared to pay when you check in. Most likely they will put a code next to your folio so they know that you are a cash paying guest. You will not be able to use your room key to charge at other parts of the hotel. You also might have to stop at the front desk before you check out so they can make sure you did not acquire any new charges such as long distance phone calls or in room movies.

It depends on what kind of hotel it is and what time of year you're going. If you're going during summer or spring vacation when everyone is off from school then you're not going to be able to get a room just by walking in the hotel and handing them cash. Even if you do go during a non busy time there is still a possibility that rooms will be unavailable, especially if you only want to stay at one certain hotel. My advice to you is unless you don't care where you stay, book a reservation before hand. Also, when you stay at a hotel they require to have a credit card on file just in case of any lost items or damages done to the room. You can pay in cash but you still need a credit card for them to have on file.
You can but its getting harder to where I live. I've been fighting a rear guard action for a few years now as I refuse to own a credit card. Nearly all hotels insist on a credit card as security in case you run up huge phone bills, eat/drink everything in the mini bar, book meals and room service to the room, trash the room and then leave without clearing up the extras that may not have been included in your initial booking and payment.
My suggestion would be get a prepaid visa card. You buy the card use it for the hotel room when the card is empty throw it away. You don't have to worry about fraud or someone stealing the cash.
